American Chop Suey

America, you asked for it.

Since we were on the food network, we have received thousands of emails wanting our recipe for American Chop Suey. Well Carol has decided to unlock her recipe vault, so here you go!


* 5 lbs. Hamburg,
* 2 cups diced onions,
* 2 cups diced peppers,
* 1 tbs. granulated garlic,
* 1 tbs. oregano,
* 1 tbs. basil,
* 1 tbs. Tasty Blend,
* 1 chopped garlic,
* 2 tsp. black pepper
* 1 #10 can tomato strips,
* 1 #10 can tomato sauce,
* 1 12 oz. can tomato paste,
* 1 qt. tomato juice
* 5 qt's. Macaroni

Cook top 9 ingredients together, sautéed until tender.
Add next 4 ingredients to sauté.
Cook macaroni al dente, strain and add to sauté and mix.

Chili

2 CUPS PEPPER DICED
2 CUPS ONION DICED
10 LB. HAMBURG
1 CUP CHILI POWDER
2 TSP. CAYENNE PEPPER
2 TSP. CUMIN
2 TSP. HOT CRUSHED PEPPER
1 CAN CHILI SAUCE
1 CAN KIDNEY BEANS
1 CAN KITCHEN TOMATOES

Saute pepper, onions and hamburg.

Add spices.

Once almost cooked, add canned goods and simmer for 1/2 hour.

Cole Slaw

2 bags cabbage,
2 bags carrots,
2 tbs.celery salt,
2 tbs. gran. onion,
2 tbs. gran. garlic,
1 1/2 tbs. black pepper,
2 cups sugar,
1 quart mayo,
2 tbs. dry mustard,
2 fresh squeezed lemons.

Place bean pot in freezer to cool. Place and mix all dry ingredients in bean pot. Squeeze lemons in, mix in mayo by hand.

Corn Chowder

8 quarts of water,
1/2 jar chix base,
2 cups diced onion,
2 cups diced celery,
1 tbs. gran. garlic,
1 tbs. gran. onion,
1 tbs. poultry seasoning,
1 large can cream corn,
2 qts. of cream,
4 qts. of diced potato,
1 cup of parsley.

Combine water, chix base and seasonings in pot with onions and celery. Bring to boil until vegetables are tender. Add cream corn and bring to boil again. Add 2 qts. of cream, heat up to (but not over) 180 degrees. Add roux mixture of 2 cups whirl and add flour till smooth. Promptly take off stove and put in bucket with potato and parsley. Put in walkin to cool.

Grapenut Custard

36 eggs,
5 cups sugar,
1 tbs. cinnamon,
1 tbs. nutmeg,
1 cup vanilla syrup,
1 gallon milk.

Mix first 4 ingredients together for 5 minutes, then add vanilla syrup and mix for another 2 minutes. Layer the bottom of pan with grapenuts. Pour in the mixture and sprinkle top with cinnamon and sugar mixture. Cover and bake for 1 to 1-1/2 hours.

Pork Pie

30 lbs. ground pork,
8 tbs. salt,
5 tbs. gran. onion,
2 tbs. gran. garlic,
1 tbs. white pepper.
16 qts. mashed potatoes
6 tbs. bell season,
1 large sauteed onion

Mix first 5 ingredients together in one bowl. Start a new 16 qts. pot of mashed potatoes and mix together with the previously mixed ingredients. Add bell season and diced onion. Place ingredients into pie. Each pie should weigh approximately 2 lbs. 6 oz.
